Andrea Vignali is the executive chef and co-owner of Al Dente Enoteca in Carlton, a modern Italian restaurant ranked among Melbourne's top 50, and a World Tapas Champion — he took the title in Spain with a Spanish-Australian tapa, along with a €10,000 prize. Raised in Robbiate, north of Milan, he was cooking in his uncle's bistro in Liguria at 12. He spent four years at Pierino Penati, a Michelin-starred restaurant near Lake Como, became head chef of La Tessitura at 22, and after moving to Melbourne cooked for five years at Grossi Florentino alongside Guy Grossi.

Al Dente did not begin as a restaurant. When Melbourne's first lockdown in March 2020 left him without work, Andrea started making fresh pasta and selling it to friends through Instagram. With business partner Davide Bonadiman, that delivery round became Al Dente Enoteca. The same instinct — show the work and let people in — now drives a body of short-form video that has passed 200 million views. One reel about tiramisu portion sizes has been watched more than 54 million times; another, explaining why restaurants lose money on tiramisu, more than 35 million. He is also the official Australian ambassador for Prosciutto di Carpegna, a protected Italian product.

Few speakers can talk credibly about classical technique, small-business survival and the mechanics of online attention in the same session. Andrea can, because he has done all three in the last six years. For conferences, hospitality and food-industry events, brand activations and client dinners — whether on stage, hosting a tasting or cooking live — he offers audiences a clear look at how a business is built from almost nothing, and how a good story, told well and often, becomes its most valuable asset.
